Zobo is a popular beverage drink in Nigeria and popularly referred to as ‘Zoborodo’ in the Northern part of Nigeria. Made from Roselle leaves (Hibiscus), the delicious drink is not only refreshing but without any additional ingredients, highly nutritious and as such there are many health benefits.

It is consumed immediately or refrigerated. Poor storage can lead to spoilage. The resulting liquid tasted horrible and bad. Zobo drink can be fermented into red wine using probiotic organism Lactobacillus fermentum and Saccharomyces cerevisiae. Both organisms produced wines of different physicochemical properties within 24hours fermentation. There is gradual alcohol increase during the fermentation process.

Nutritional Value Of Zobo Drink

Roselle is mainly cultivated for its calyx, which is of three types: green, red and dark red. The red calyxes that are the most used are characterized by their concentration of anthocyanin. Delphinidin 3-Sambubioside and Cyanidin3-Sambubioside are the major anthocyanins.

Roselle is also rich in organic acids, minerals, amino acids, carotene, vitamin C and total sugar in its calyx, leaves and seeds at variable levels depending on the variety and geographical area. A number of compounds have also been isolated and characterized from Roselle including flavonoids, anthocyanidins, triterpenoids, steroids and alkaloids.
